Chef Mario is the Corporate Executive Chef and Senior Director of Culinary Innovations in the Insights & Innovation Group at Tyson Foods, Inc., in Springdale, AR. But we just simply call him “The Chef” – a well-deserved moniker for having dedicated almost 11 years of his career to Tyson.
The chef creates, develops and tests new products for the Consumer Products and Food Service Divisions of Tyson. This means he’s the go-to guy for creating some of Tyson’s tastiest cuisine available. Mario’s obsession with creating edible art began when he graduated from the University of California. So, he headed to San Francisco to attend a small private culinary academy for some hard-core culinary education. Amassing from experience he gained from his work in cruise ship, bistro, hotel & fine-dining kitchens, Mario parlayed this into a career in food production as the corporate chef for Mallard’s Food Products later combining his culinary mastery and knowledge of food technology as a research chef at Culinary Foods in Chicago.
Developing the best-tasting products comes from the heart – a deep-seated passion for food – not from a cookbook. But being able to take ingredients and transform it into something amazing is a continuous journey – and is something the chef takes seriously.
In addition to many awards and accolades, Mario is committed to developing new food products and is the author of “Chef Formulation and Integration: Ensuring that Great Food and Food Science Work Together”. Mario has also appeared as a guest judge on the popular Food Network show “Chopped,” as well as being a restaurateur in NWA creating eateries dedicated to modern Ozark cuisine. In March, Chef Mario was the recipient of the Research Chefs Association 2019 Pioneer Award; Pioneer in Culinology®: A person who, through their own lifetime achievements, has become a recognized leader in the food industry, employing the practice of combining culinary craftsmanship and food science.
